2 cans tuna (5 oz), drained well
2 green onion, chopped
1/2 celery stalk, chopped
1 tablespoon chopped parsley
1/2 cup panko or bread crumbs
1 teaspoon Dijon mustard
1 large eggsalt
black pepper
Directions:
In a bowl mix well all ingredients.
Form small patties and and put the them in the refrigerator for at least 15 minutes.
Coat patties with bread crumbs or panko.
Put oil in a pan and cook on medium-high heat 2-3 minutes per side or until golden brown.
Let them cool 3 minutes before serving.
Serve with tartar sauce, a slice of lemon and salad.
This is a tasty lunch, very easy to make and super cheap.
You can spice it up with other things like cayenne or dill instead of parsley, or Italian seasoned bread crumbs, etc.
Wonderful tuna recipe, who doesn't have a couple cans of tuna kicking around. And less expensive than crab cakes, thanks for sharing.
